A Nourishing Plant-Based Veggie Broth to Enjoy With All Of Your Fall Soups
Homemade Veggie Broth
Ingredients:
- 1 onion, chopped
- 3 cloves of garlic, chopped
- 3 stalks of celery, chopped
- 3 large carrots, chopped
- 8 cups filtered water
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- ¾ tsp sea salt
- Pepper to taste
- Coconut oil for cooking
Directions:
Heat a large stockpot over medium heat with the coconut oil. Add the onion, garlic, celery, and carrots and saute for 3-5 minutes or until the onions and translucent.
Add the water and the remaining ingredients and stir. Bring to a boil and then reduce to a simmer and cook for about 30 minutes.
Enjoy in all things you would usually use bone broth for!
